Kale, Potato, and White Bean Soup



Ingredients

1 large onion, finely chopped
5 cloves garlic, finely minced
1 pinch red pepper flakes
salt and pepper
8-10 cups broth (I used vegetable bullion)
1 tsp thyme
1 large bunch kale, ribs removed, and roughly chopped
1 can white beans, drained
5 Yukon Gold potatoes, cubed
1/2 -1 cup half and half (optional, vegan if omitted)
