Ever since our trip to Mexico this winter for out wedding and honeymoon, I have been craving the chilaquiles made in one of the restaurants at our resort. I took a trip to our local whole foods coop, and gave them a try.
Ingredients:
20 corn tortillas, each cut into 6 triangles
vegetable oil
1 jar of tomatillo salsa
onion, chopped
queso fresco (whatever kind of shredded cheese you have could work as a substitute)
cilantro
avocado
Directions:
Fry tortilla triangles in hot oil until crispy. Drain on paper towels. In a baking dish, arrange a layer of fried tortilla chips. Layer on some of the tomatillo salsa, cheese, and onion. Create two more layers of tortillas/toppings. Bake in 350 oven for about 15 minutes, until everything is hot, and the cheese has melted.
Serve topped with fresh cilantro and avocado.
I did try this the next day using already prepared tortilla chips, and a red chili sauce I had previously prepared. With regard to the chips, frying your own definitely tastes better, but using tortilla chips will work if you don't want to go through the hassle of frying your own.
