Lemon Bars


I made these lemon bars spontaneously, having only learned that I even like lemon bars recently in my history.  They were a huge hit with my husband, and also with my coworkers.  I found the recipe here; they are super easy, and really tasty.

Ingredients

Crust

1 cup butter, at room temperature
1/2 cup granulated sugar
2 cups all-purpose flour

Lemon Top

4 eggs
1 1/2 cup granulated sugar
1/4 all-purpose flour
2 lemons, juiced
Powdered sugar (optional)

Directions

Preheat oven to 350 degrees F.  Using an electric mixer, combine 1 cup of butter and 1/2 cup granulated sugar.  Fold in 2 cups flour.  Press onto the bottom of an ungreased 9x13 pan.  Bake for 15-20 minutes, until lightly golden.

Whisk together 1 1/2 cup sugar and 1/4 cup all purpose flour.  In a separate bowl, break eggs and beat slightly.  Add to the sugar mixture along with the lemon juice, whisking to incorporate.  Pour directly onto the baked crust.  Bake an additional 20 minutes.  Cool completely before cutting-- the bars will firm up as it cools.  Using a fine mesh sieve, sprinkle powdered sugar over the top of the cooled bars.
